Cookie Meets Kid

“I knew I wanted to be a chef since I was 5 years old"

In the early 90's, Brittania Warren climbed up onto the countertops to make her first consomme (soup of sustenance). Her concept of soup at the time was to combine every ingredient in the kitchen into a pot. Warm it up and feed it to her sick cousin.

As a teen she'd practice new recipes to her families dietary restrictions. At first it was lactose intolerance, then nut allergies, gluten intolerance and eventually her aunt's vegan lifestyle.

This is the start of Proper Foods.

Started from the bottom...

Growing up Brittania was notoriously dedicated to whatever she turned her hand to. In 2003, she was baking crepes for her French Class, by 2009 she was making vegan lemon bars for her entire HS senior class. It was a small class :)

Brittania looked for opportunities to bake, and she always found it. In college, she started a Culinary Club at the University of South Florida, and it quickly grew into a Culinary Program that allowed students to create desserts that generated revenue for the college cafe. The excitement and intensity of cooking continued to push her down a culinary path.

Cookie Meets Chef

The excitement and intensity of cooking led her to her first fine dining job at Sea Salt where she worked extensively on allergen friendly desserts, Italian specialty and gelato.

Later she went to work for William Dean Chocolates, which was a boutique chocolate shop specializing in classic french pastries/technique. From Pistachio Dacquoise, Bon Bons, hundreds of scones and eventually thousands of macarons for the Tampa Bay area. 

In her last year on the line she realized she could create allergen friendly product that not only was sustainable but filled with superfoods and antioxidants. 

... Now We Here

After a very successful kickstarter campaign, Proper has now shipped over 20,000 cookies. The recipe has gotten even better with more fiber, more protein and completely edible/bakeable. 

Life is too short not to enjoy it, and too long to spoil it. We can have our sweet cravings without sacrificing our health. Other cookie doughs on the market are a shortcut with no long term benefits. Proper Cookie Dough tastes the same, but under the hood it's even better.
